Vinification

Whole-cluster pressed and naturally fermented using indigenous yeasts in concrete Nico Velo (1200L) and Wise-shape (850L) vessels. Lees contact with occasional batonnage during concrete aging delivers enhanced micro-oxygenation, structural balance, and stability.

Tasting note

Pale straw with green reflections. A delicate nose of white flowers and tea leaves, with hints of citrus peel. The palate is fresh and precise, with elegant salinity and a fine, focused texture, finishing long and mineral in a clear expression of its volcanic origin.

Serving suggestion

Ideal with shellfish, raw or grilled fish, sushi and fresh cheeses, and a refined aperitif on its own.
